Kefir is considered probiotic gold!  This very happily grows and thrives in raw milk and is more likely to be more effective in the intestinal tract that a probiotic capsule. Kefir made directly from grains has more probiotic bacteria than from other sources such as commercial kefir or capsules. A real boost to your immune system!  The fermentation of the kefir culture helps digest the milk protein  and can often eliminate allergic reaction to dairy products.

The frozen grains (1 T) come in a small amount of milk ready to thaw and put in 1 quart of milk.

Leave your grains to ferment on the counter in a capped jar for about 24 hrs.  The longer you let it sit the the stronger it will be.  After the 24 hours pour the fermented liquid into a fine mesh colander over a bowl and tap the colander a little until the milk goes through into the bowl and the kefir grain are left in the colander.  Use the grains over and over to make more.   Just pour grains back into your previous jar and begin again.  The strained liquid (kefir)  in your bowl should be refrigerated and used in the following:

Berry Smoothie:

1 cup kefir

1 generous tablespoon of sweetener ( honey, stevia, sugar)

1 tsp. chia seeds or golden fax

1 T coconut oil( optional)

3-4 ice cubes
